Grilling Vegetables

It's grilling season again for those who live in cooler climates. We use to only grill meat on our grill, until a few years ago. We started with Zucchini and Summer Squash. Then we bought a grill pan and started to add mushrooms and other veggies. We found that the best seasoning is seasoning salt, and pepper. Of course we sometimes add thing like soy sauce or salad dressings to our veggies, but on the avverage night, we keep it pretty simple.

When you are done, put them on a plate and add things like feta cheese, olives, and salsa. My husband use to say he hated Zucchini, turns out he loves it almost as much as I do. If you grow Zucchini in your garden make sure you pick them small. They have the best flavor this way.

yum! i think my favorite use right now for grilled vegetables is inside a panini, with some melted cheese.

I love grilled veggies. I like to take zucchini and squash and slice them. Then coat in olive oil and fresh chopped garlic...salt...pepper and slap it on the grill ! YUM !
